Crockpot Freezer Meals | Beef Stew Slow Cooker Recipe

Since I like to use my crockpot, I'm taking advantage of cooking in a crockpot by planning ahead and putting together some crockpot freezer meals such as this recipe for Freezer Crockpot Beef Stew.

Crockpot Freezer Meals

When I transferred to a new city for my full-time job, I didn't have the convenience of being able to stop by a grocery store during lunchtime to pick up a few things for that evening's dinner.  I turned to my trusty slow cooker.

Here are some terrific dump crockpot recipes to simplify and make meal prep easy during hectic times. I use my Foodsaver Vacuum Sealer to freeze ahead and dump in the morning on those busy days.

Chicken Cacciatore is another favorite dump and go freezer meal we enjoy.

Serve with some delicious homemade Sourdough Bread recipe (it's easier to make than you think) and gut-healthy too with all of the probiotic properties.

Crockpot Beef Stew

Hearty Crockpot Beef Stew

Hearty Crockpot Beef Stew

Beef prices have risen recently because of the high cost of gas and transportation. Rather than buy sirloin tips for my stew, Shoulder London Broil  was on sale this week, so I bought several steaks and cut them up and cubed them myself at home.

Whether you're a stay at home mom, or work part-time or full-time outside the home, it's hard to get your home organized. Even if you're a grandmother, you might be thinking you have it all covered at home since your pantry is organized immaculately and everything in your kitchen has its place. It doesn't change the fact that you're still busy working all day and driving kids or grandchildren to practice, running errands or taking care of your household in the evenings. Another thing you can learn to do to simplify your life is to plan your meals and cook in advance.

Meal planning and bulk cooking are both wonderful techniques you can utilize and modify to fit your families needs. The idea behind this is simple. The principle is that you cook and or prepare your meals ahead of time and then preserve them by either freezing refrigerating them. It can also help stretch your food budget dollar further, since you can cook one large meal and get two or three other meals from it with the proper planning.

Start by writing down a list of your favorite meals and plan on preparing a grocery list that will coincide with your menu. Since you're learning to cook in bulk, your shopping list will have to change accordingly so you're sure to have enough ingredients on hand when the time comes to do the cooking.

The most important tool in meal planning and bulk cooking is your freezer. Freezer bags are a great space saver if you have a small freezer. You can fit many in the same space of a few storage containers. Be sure to incorporate lots of quick and easy meals that your family can warm up and serve themselves in the event you're not able to be at home for dinner or you just need to grab something that's quick.

You'll also learn to love your slow cooker. Experiment with different recipes and variations on your favorites. They also make easy work of cooking whole chickens or roasts which can be frozen or refrigerated for later use very easily.

You're only limited by your own imagination when cooking in bulk for the week ahead. Factor in the time you save by not having to do a lot of after dinner cleanup or dishes, Whether you're cooking for one, or cooking for a family, you'll be glad you took the time to simplify your life and master this important organizational skill.

Freezer Slow Cooker Beef Stew

3 c. chopped onions
2-1/2 c. coarsely chopped green bell peppers (about 2 peppers)
2 c. fresh green beans, diced
2 cups of baby carrots or diced carrots
4 cloves garlic, minced
2-3 lbs. beef stew meat, cut into one inch cubes, or whole and you can cut it after it's cooked
4 (6-oz.) cans tomato paste
2 Tbl. of Hungarian paprika or regular paprika
1 tsp. ground black pepper
4 c. hot cooked wide egg noodles, do not add in freezer bag, cook separately, day of cooking
1/2 c. dairy sour cream, do not add in freezer bag, use as garnish on the day of cooking

Transfer everything into two gallon freezer bags, shake it up, seal, label and put in the freezer. DO NOT add the sour cream and noodles as the sour cream is for garnishing after the meal is cooked. Cook the noodles separately according to package directions on the day of cooking.

On the day of cooking, dump bag contents into your crock pot and cook on high for 4 to 6 hours, or low 6-8 hours, depending upon your specific slow cooker.

Copycat Disney Dole Pineapple Whip Recipe | Frozen Dessert

If you're looking for a simple refreshing dessert at the end of your summer meals, look no further than this Copycat Pineapple Whip!

Copycat Disney's Dole Pineapple Whip

Copycat Disney's Dole Pineapple Whip

I'm  Disney fanatic and have been to Disneyworld in Florida many, many times, yet haven't seen this Pineapple Whip.  The reason is I'm probably rushing around the parks, Disney Springs or Boardwalk chasing after the little grandkids.

(Edit) Finally, on my last trip to Disney World I found it at a little place in Adventure Land, I think it was across from the Jungle River Boat Cruise. There's also a place to get Pineapple Whip in Disney Springs.  I've also had it at the Polynesian Village (and they sell an adult version there, too, lol )

Recently I discovered this copycat recipe for Disney's Dole Pineapple Whip.  It's made from only 3 ingredients - Vanilla Ice Cream, frozen Pineapple Chunks and a bit of Pineapple Juice or Orange Juice.  This pineapple whip is such a delish soft serve dessert!

Copycat Dole Pineapple Whip Recipe

There are other recipes out there using only two ingredients - but I haven't tried them.

When making this copycat Dole Pineapple Whip, I found it's easier if you let the frozen pineapple chunks thaw a bit in the bottom of the blender.  Blend for a bit, then add the vanilla ice cream, and then add a smidge of pineapple juice or orange juice until you get the consistency you like.

That's it!

This Dole Pineapple Whip could be made a little thinner, as a breakfast smoothie, or thicker to give the consistency of a sorbet.  I love making homemade ice cream too !

Have the grandkids or kids help in the kitchen !  Enjoy any time of the year!

German Chocolate Caramel Bars | Cake Mix | Bar Cookies Recipe

Here's one of my favorite decadent baked bar cookie recipes for parties.  These German Chocolate Caramel Bars are ooey, gooey and very rich, yet easy to make from a cake mix!

German Chocolate Caramel Turtle Bars

German Chocolate Caramel Bars Cake Mix Bar Cookies Recipe

Cake Mix Cookie Bars

This German Chocolate Caramel Bars recipe is a family favorite, passed down from one of my co-workers who's long retired and moved on to sunny Florida.  Every time I make sweets I have fond memories of the parties and bake sales held at the office. You'll enjoy these every season of the year, for Mother's Day, Father's Day, Memorial Day picnics, summer cookouts, during the winter holidays, birthday parties and even after Sunday dinner!

These cake mix bars are so sinful! My oldest daughter has a sweet tooth (she takes after her mom), but my hubby is known to make anything chocolate disappear too, as does charming son-in-law.

Treat the kids and grandkids and watch everyone ask for more!

Especially delicious as a dessert treat for your family, dinner guests or kids' sports team celebrations. I usually made them with Duncan Hines Signature German Chocolate cake mix, if I can find it.

Frozen Lemonade Pie Recipe | Sweet Treat | Frozen Dessert

A Frozen Lemonade Pie recipe  is the perfect easy dessert on a hot summer day  (or anytime) and takes just 5 minutes to make! These pies freeze great.  When preparing for freezer cooking, it's  nice to have a second one on hand for whenever you need a quick dessert.

Frozen Lemonade Pie Recipe

We here in New England really enjoy lemonade, especially Del's Lemonade from Rhode Island!

Frozen Desserts

My friend in New Hampshire sent this lemonade pie recipe to me.  Just try it for a cool summer treat! The whole family, kids and grandchildren will enjoy it! Make it Pistachio Green for St. Patrick's Day too.

Frozen Lemonade Pie Recipe

I want to try some of the Bacardi mixes in this recipe for casual entertaining!

You used to be able to buy small cans of lemonade which made one pie but I can only find the large ones now. You can make 2 at a time and use the whole large can of lemonade. Try it also with fat-free Condensed milk and fat-free Cool Whip. My friend actually likes it better because it is not so rich.

Frozen Lemonade Pie Recipe

Have the kids help in the kitchen, or surprise the kids or grandkids and make this frozen pie for a hot summer day using pink lemonade or for St. Patrick's Day or 4th of July lemonade!

Lemonade Pie Recipe

1 can Frozen lemonade slightly thawed (use only half for one pie !)
1 can Eagle Brand sweetened CONDENSED Milk
1 12-oz. Cool Whip, thawed
1 Graham Cracker Crust

Carefully remove plastic top of crust and rinse it . You’ll reuse it to cover pie.
In a mixing bowlicon, blend together partially thawed lemonade with Condensed milk. Add Cool Whip and thoroughly blend.
I also add a few drops of food coloring to intensify color–yellow for yellow lemonade, green for limeade or red for pink lemonade.
Spoon into crust and “make pretty”.
Invert plastic cover and seal around foil edges. Freeze.
Remove from freezer about 15 minutes before serving.
Garnish and decorate with a few raspberries and mint leaves or pipe whip cream on top if you want to go one step further.

Easy Monkey Bread | Cinnamon Bubble Bread Recipe | Vermont Maple Syrup

My daughter's in-laws shared this magnificent easy and quick recipe for easy Monkey Bread, made from ready-made biscuit dough from the dairy case. The in-laws fondly call it Bubble Bread. Perfect for any brunch, or Christmas morning. It's similar to a coffee cake, but you break it apart.

Cinnamon Monkey Bread Recipe

I enjoy making this homemade Vermont-style Monkey Bread for my family anytime during the year.

To me, Vermont is synonymous with mountains, fall foliage, winter skiing and maple syrup! Not only is Vermont a beautiful state, the people from the Green Mountain State are also wonderful, and creative cooks to boot!

My first taste of this easy Monkey Bread or Bubble Bread was when I was an overnight guest at my charming son-in-law's parents' home one snowy winter. Mr. Charming's mom whipped up snacking bread which was rich, buttery, ooey gooey and dripping with New England Grade A Pure Maple Syrup! We just pulled it apart, and licked our fingers as we sat by the roaring fireplace in their Great Room!

Old Fashion American Goulash Recipe | Simple Easy Pasta Supper

This recipe for basic old fashion American Goulash comes together quickly for a simple easy pasta supper.

Ground Beef and Elbow Macaroni Dinner American Goulash

American Goulash Ground Beef Skillet Casserole

My mom would make this easy ground beef dinner a few times a month for us.  Back when I was a kid, we just called ground beef plain old hamburger meat.  Now you can get 80% Lean, 85% Lean, 90% Lean, Ground Chicken, Ground Turkey, or Turkeyburger.  Use whatever  you like.  I use whatever's on sale, as my husband and since I've switched to the Mediterranean Diet for healthy eating, we now use Ground Turkey or Ground Chicken.

American Goulash Recipe Ground Beef Skillet Casserole

Of course, everything homemade tastes better, because you can control the ingredients and seasonings.  I won't use the box mixes similar to Goulash (or sometimes called American Chop Suey).  It's just too easy to make your own.

To make supper come together even faster, I prepare Freezer Meal packets of ground beef ahead, that already have diced tomatoes and onions in it.  I freeze in quart bags, about 2 cups each.

American Goulash Casserole

1 lb ground beef

1 large onion, chopped

1 large green pepper, chopped

1 tablespoon garlic salt

1 teaspoon pepper

Oregano, to taste

28 ounces diced tomatoes

15 ounces tomato sauce

1 lb elbow macaroni or 1 lb medium pasta shells

1 cup cheddar cheese or 1 cup Monterey Jack cheese, shredded

Brown ground beef, onion and pepper in a large skillet
Season with garlic salt and pepper.

Add tomatoes and tomato sauce.

Simmer 10 minutes while macaroni is cooking.

Boil macaroni al dente, drain, reserving some of the pasta water. Then rinse.

Return macaroni to pot, add beef mixture along with the reserved pasta water.

Serve in dinner bowls with shredded cheese.

Goulash is even better left over and reheated (add a little tomato juice when reheating, if too dry).

Summer Squash Recipe | Squash Casserole | Yellow Squash Recipe

Summer means fresh vegetables from your garden, or in my case, the local Farmer's Market.  Here's an easy Yellow Summer Squash Recipe for a casserole made with stuffing mix that's sure to please everyone young and old alike, from kids to grandkids to grandparents!

Yellow Squash Casserole

So while on Pinterest, I saw a vegetable casserole recipe for yellow summer squash that reminded me that I hadn't made my Junior Woman's Club squash recipe for our family favorite in years.  In fact, about nine years, because my charming son-in-law hadn't even had the pleasure of remembering it!

So here it is.  Yes, it calls for a can of cream of chicken soup.  Yes, this vintage recipe is THAT old, that it calls for cream of chicken soup!  But the surprise is that it also calls for stuffing mix.  Such a delicious combo!  You won't be going tsk tsk after you taste it!

Authentic Spaghetti Sauce Recipe | Tomato Sauce | Red Gravy

In New England we love our homemade Spaghetti Sauce! Everyone has a favorite family recipe for Pasta Sauce, and this is a great one that freezes well.

Here's what to do with all of those fresh tomatoes from your garden - or those you picked up from your local farm stand! Make the Best Homemade Spaghetti Sauce (also called Italian Gravy)

Homemade Spaghetti Sauce Recipe Red Gravy Pasta Sauce Recipe

In Connecticut we call is Spaghetti Sauce, Sunday Sauce, or Pasta Sauce.  However, in Rhode Island (and New Jersey, I guess) it's called Red Gravy or Sunday Gravy.

Pasta Sauce Recipe

At the office we would often have pot-luck lunches.  A co-worker who is Italian would always bring in terrific pasta dishes.  She eagerly shared her homemade spaghetti sauce recipe with us.

Homemade Tomato Spaghetti Pasta Sauce Recipe Red Gravy Pasta Sauce Recipe

This sauce or red gravy freezes well, makes and makes a good size batch.  The key to making this delicious sauce, and  achieving the proper consistence (to me) is using the brand of tomatoes that she recommended. The meat is an absolute must to give this pasta sauce its flavor.

Italian Spaghetti Sauce Recipe - Italian Gravy

Ingredients:

1 can Tuttoroso Crushed Tomatoes (or desired amount of your own fresh crushed tomatoes)
1 28 oz. can Tuttoroso Puree
2  small cans Contadina Italian-Style Paste (this works the best)
2  country pork spare ribs (boneless) or pork chops (boneless)
1/2 lb. sweet sausage, cut in 1/3ds
1/2 lb. hot sausage, cut in 1/3ds
 EVOO Olive Oil
3/4 lb. ground chuck (not sirloin, it's too lean)
 1 onion, chopped
 3 -4 cloves garlic, chopped
 oregano
 basil
 parsley
 1 bay leaf
 cooking wine (about 1/3 cup)
  salt
  pepper
  sugar (optional)

  Preparation:

               1.  Add olive oil to bottom of big stock pot.  Add
chopped garlic to soak.  Don't turn on pan yet.
Chop onion, turn on stove, and add to garlic and
olive oil.  Cook slowly till onions are soft.  Don't
burn.  Remove onion and garlic and set aside.

               2.  Add pork and sausage, cook until brown.  Don't
remove drippings.  Don't overcook.  Add ground
meat and cook until brown.  Now, remove sausage
and pork, set aside.  Leave all the drippings in!

               3.  Turn up heat a bit, and add the onion/garlic
mixture and tomato paste into the ground meat
mixture and more oil if needed.  Stir 2 minutes,
               making a roux.

               4.  Add crushed tomatoes, and puree.  Add 1 can of
water.  At the most, if more water is needed, add
from the tomato paste can.  Put the sausage and
               pork back in.

               5.  Add spices.  Stir.  Bring to boil.  Reduce heat,
and simmer uncovered about 2 hours.  Adjust
seasonings as needed.  May need more sugar.

Pick-Your-Own Berries | Blueberry Raspberry Cobbler | Crisp Recipe

Round up the family and head out to the pick-your-own farms!  It's blueberry picking season now!  Blueberry and Raspberry Cobbler are some of my family's favorite comfort-food desserts - it's super easy to make.  Cobblers are even better warm from the oven and served with your favorite ice cream!  Serve as dessert or for brunch.

Blueberry Raspberry Cobbler

We have quite a few pick-your-own berry farm stands here in New England and always had fun taking the kids and grandchildren out to the fields!  We used to go to Roses Berry Farm (now closed for good) in Glastonbury, CT or Lyman Orchards in Middlefield, CT. Connecticut has a ton of pick-your-own farms to choose from.  You can check your state agricultural website for lists, or visit your local farmer's markets.

I usually freeze blueberries or raspberries in freezer bags to use throughout the winter months for baking, or to give to the grandkids as snacks. Berries are so good in Smoothies, too!

Of course you could make this with any type of your favorite berries or canned berries. It's great with Maine Blackberries too! Total Comfort Food

Blueberry Coffee Cake Recipe

One of our favorite blueberry recipes is blueberry coffee cake, which can add a delightful taste of summer to even the coldest winter.

Blueberry Coffee Cake Recipe

½ cup of salted butter, softened
1 cup of sugar
3 eggs, beaten
½ teaspoon of vanilla
½ teaspoon of cinnamon
1 teaspoon of baking powder
1 teaspoon of baking soda
¼ teaspoon of salt
2 cups of all-purpose flour
1 cup of sour cream
(Option: use 1 cup of vanilla yogurt instead of sour cream)
2 cups of fresh blueberries
(Option: if using frozen berries, be sure to thaw before adding to mixture)

Topping:
1 cup of brown sugar
¼ cup of salted butter, softened
½ cup of all-purpose flour

In a large bowl, add ½ cup of butter and one cup of sugar.

Cream together butter and sugar until crumbly.

Add the 3 slightly beaten eggs and mix well.

Add the vanilla, cinnamon, baking powder, baking soda, and salt and blend until smooth.

Mix in half of the flour and half of the sour cream. When blended, add the remaining flour and sour cream and blend again.

Using a spatula or a large spoon, stir in the fresh blueberries. Mix well. The mixture will turn blue or lavender.

Preheat the oven to 350 degrees. Lightly spray a 9x13 baking dish or bundt pan and pour in the blueberry mixture. Set mixture aside while you make the topping.

In a small bowl, cream together the brown sugar and softened butter. Using a spoon, add the flour a little at a time until the topping is crumbly.

Scatter brown sugar crumbs on top of the blueberry mixture.

Lightly tap the pan on the counter to make sure the batter is distributed evenly. Bake at 350 degrees for 40 minutes.

Serve warm straight from the oven with hot coffee or cold milk, or if you want to use it as a dessert, cool and serve with fresh cream, ice cream, canned peaches or whipped topping.

Yankee Apple Pandowdy Recipe | Fall Desserts

You've probably heard the old saying, "An apple a day keeps the doctor away."  Here's a delicious Apple Pandowdy recipe that you can enjoy using fresh fall apples.

Skillet Apple Pandowdy Recipe Cobbler

I'm also going to share a few nutrition facts for apples  so you'll know why Mom or Grandmom says to eat several servings of fruit every day! (Be sure to check out my recipe for apple cake with caramel whiskey sauce too!) There's so many wonderful things to do with apples!

Now's the time to stop by your local farm stand or farmer's market for fresh fall produce!

We've been taught in health or home economics classes that the food pyramid tells us to get a certain number of servings of fruits and vegetables a day. But, all fruits are not created equal. They may all have a benefit for our health but not necessarily the same benefits. What’s inside of these foods determines how they will impact our health.

Apple Pandowdy

Nutrition Value in the Apple

Apples make a good overall showing in the healthy fruit category. They're small enough to carry along with you wherever you go and don’t bruise as easily as other fruits with softer flesh. Apples come in several varieties that have been bred for certain features.

Sourdough Apple Cake Recipe

They sound like champion racehorses, but really they're the champions of the fruit world. If you look a bit closer, you’ll see that that crisp, white flesh is hiding a fat attacker—fiber. Insoluble fiber isn't absorbed by the body but removed. As it passes through our digestive system, it binds to fat molecules and takes them out with it.

Apples also contain plenty of Vitamin C.   This vitamin plays an important role in our body. Vitamin C is needed for essential brain functions and to maintain the structure of blood vessels and bones in the body. The majority of our daily dose can come from eating an apple or two. With the incidents of osteoporosis in older women, consuming a healthy amount of Vitamin C can prevent this condition from happening to you.

Apples also contain antioxidants. Vitamin C is an antioxidant but they also contain some that are unique to apples. One is phloridzin. Researchers have found that this antioxidant called a flavonoid helps to reduce bone loss in women going through menopause.

Pectin found in apples works to reduce the amount of bad cholesterol in the blood. Bad cholesterol (LDL cholesterol, or lousy cholesterol as my doctor likes to call it) increases the chance of plaque formations in the vessels. This can lead to heart attacks or strokes. In combination with antioxidants, the amount of LDL is reduced and the vessels maintain their elasticity and prevent the clumping of platelets.

Quercetin is another antioxidant compound found in apples. Researchers believe that it functions to prevent certain diseases and cancers along with limiting the damage caused by free radicals in the body. Free radicals cause all sorts of problems as we age and antioxidants work to stop that damage and restore our bodies to a healthy state.

Apples contain no cholesterol, no fat, and very little sodium.  Apples are low in calories and high in fiber. When choosing a snack or a healthy addition to recipes, look no further than your local farmers market or pick-your-own apple orchard.
