Strawberry Rhubarb Cobbler Recipe | Rhubarb Crumble


Don't you just get excited when fresh Strawberry Season is here?  June is our month for fresh strawberries here in New England. Make a Strawberry Rhubarb Cobbler for dessert.



Strawberry Rhubarb Cobbler Recipe


When my husband and I attended the 200th Anniversary of the Comstock, Ferre & Co. Heirloom Market Seed Company in Wethersfield, Connecticut.  There were reenactments of colonial history, vendors and a Farmer's Market set up.  I picked up some local fresh-picked strawberry and rhubarb.

Spring is strawberry and rhubarb season in New England.   There's nothing like snacking on a fresh hand-picked berry!   When the girls were younger, my husband and I used to take them to berry farms in Glastonbury.  Now my oldest daughter continues the tradition with her family.

Besides Strawberry Cake, a favorite dessert passed down from a very good friend who grew up on a horse farm with plenty of land and gardens in Marlborough, Connecticut is Strawberry Rhubarb Cobbler.  If you don't want to make a crisp or dough topping, just serve warm as stewed strawberry rhubarb and garnish with ice cream or fresh whipped cream! Otherwise, you can use it as a rhubarb or strawberry pie filling.

It makes a lovely crumble dessert especially if you use make your own fresh whipped cream with a whip cream canister dispenser!

Did you know that you can freeze rhubarb? If your garden yields a large harvest, wash, cut and dry the rhubarb. Place in freezer bags to use whenever you get a hankering for some old-fashion cobbler!

If you're not near local farm stands, look for this pretty pink fruit in your grocery store and pick up a bunch

Strawberry Rhubarb Cobbler Recipe


4 c. sliced rhubarb, or strawberries, or half and half
1/2 to 3/4 c. sugar
2 tbl. cornstarch
1/4 c. water
2 tbl. butter, cut in small pieces

*Topping:*
1/4 c. flour
1 -1/2 tsp. baking powder
2 tbl. sugar
1/4 c. butter
1/2 c. milk
1 egg

Place rhubarb and strawberries in saucepan.
Combine sugar, cornstarch, water and butter.
Pour over fruit. bring to boil, stir, reduce heat and simmer 5 minutes. Pour fruit into 8x8 Pyrex glass baking dish
Combine flour, baking powder and sugar.
Cut in butter until crumbly.
Mix egg and milk, add to flour mixture, stir until moistened.
Drop by spoonfuls.
Bake 400° for 20-25 minutes until brown.
Serve warm with vanilla ice cream or whipped cream.

Peach Dump Cake Recipe | 3 Ingredient Dump Cake | Fruit Desserts

Here in New England we have a plethora of fresh Pick Your Own Orchards.  Here's an easy recipe for a Peach Dump Cake using only 3 ingredients !  You can also make it with canned peaches when fresh peaches are out of season.

 My daughter and I also went apple picking at Lyman Orchards, so I'll be using this recipe to make an Apple Dump Cake.  A dump cake is very similar to a cobbler recipe. You can also used canned fruits of your choice.

Fresh Peach Cake Dump Cake Cobbler

2 c. fresh peaches, diced
1 box Duncan Hines Yellow Cake Mix
1 stick Cabot Butter
Cinnamon, to taste

Spray tarte pan or baking dish with Pam
Layer diced peaches
Sprinkle cake mix over peaches
Sprinkle cinnamon to taste
Bake 350 degree oven for 30-35 minutes
Notes

Also can be made using canned peaches in heavy syrup

Serve with ice cream, whipped cream or hard sauce

Pick-Your-Own Berries | Blueberry Raspberry Cobbler | Crisp Recipe

Round up the family and head out to the pick-your-own farms!  It's blueberry picking season now!  Blueberry and Raspberry Cobbler are some of my family's favorite comfort-food desserts - it's super easy to make.  Cobblers are even better warm from the oven and served with your favorite ice cream!  Serve as dessert or for brunch.

We have quite a few pick-your-own berry farm stands here in New England and always had fun taking the kids and grandchildren out to the fields!  We used to go to Roses Berry Farm (now closed for good) in Glastonbury, CT or Lyman Orchards in Middlefield, CT. Connecticut has a ton of pick-your-own farms to choose from.  You can check your state agricultural website for lists, or visit your local farmer's markets.

I usually freeze blueberries or raspberries in freezer bags to use throughout the winter months for baking, or to give to the grandkids as snacks. Berries are so good in Smoothies, too! 

Of course you could make this with any type of your favorite berries or canned berries. It's great with Maine Blackberries too! Total Comfort Food

Comfort Food Raspberry Cobbler Crisp Recipe


3 cups raspberries or blueberries (or 1 package
12 or 16 oz frozen)
2 tbl  lemon juice
2/3 cup  packed brown sugar
1/2 cup  flour
2/3 cup  quick cooking oats
1/3 cup  margarine or butter, softened
3/4 tsp  cinnamon
1/4 tsp  salt
whip cream or ice cream

Spread washed and stemmed berries in square 8×8 baking pan, quiche dish or tarte dish
Sprinkle with lemon juice
Mix remaining ingredients except cream
Sprinkle over berries.
Microwave uncovered on high 7 to 10 min.
Let stand 10 min.

Or bake 375 degree oven for 30 minutes.
Serve warm a la mode with ice cream
