Fresh Strawberry Cake Recipe | Cream Cheese Frosting

When it's strawberry picking season, and this is a delightful cake to make with fresh strawberries!  There's nothing like taking the kids or grandchildren and going out to the strawberry patch to pick your own fruit! Strawberry Cake is a great comfort food dessert to hit the spot.



Strawberry Cake with Cream Cheese Frosting


Of course you can always make this delish cake with strawberries from your grocery store.

I like to make a fresh fruit strawberry rhubarb cobbler too! This recipe was shared by one of my co-workers and has quickly become a favorite!  Starting with a box cake mix, it's easy and quick to make. Bring to your next summer picnic - Top it off with homemade cream cheese icing!

Easy Strawberry Cake Desserts


1 box yellow or white cake mix with pudding
1 (3oz.) box strawberry Jello gelatin 
3/4 cup salad oil
2 tbl flour
4 eggs
1 cup chopped nuts (optional)
1 pint fresh strawberries (crushed)
1/2 cup sugar

*Cream Cheese Frosting*
1 package (8 oz) cream cheese or Mascarpone
1 tbl milk
1 tsp vanilla
2 1/2 cup confectioner's xxx sugar
Add sugar beating until smooth.

Beat all ingredients together on medium speed for 3 minutes
Bake at 350 for 50-55 minutes.
Cool on rack for 10 minutes.
After taking cake out of oven let sit for 15 minutes in pan, then take tube part of cake out of pan and let that set for 15 min.

Peach Dump Cake Recipe | 3 Ingredient Dump Cake | Fruit Desserts

Here in New England we have a plethora of fresh Pick Your Own Orchards.  Here's an easy recipe for a Peach Dump Cake using only 3 ingredients !  You can also make it with canned peaches when fresh peaches are out of season.

3 Ingredient Peach Dump Cake


 My daughter and I also went apple picking at Lyman Orchards, so I'll be using this recipe to make an Apple Dump Cake.  A dump cake is very similar to a cobbler recipe. You can also used canned fruits of your choice.

Fresh Peach Cake Dump Cake Cobbler

2 c. fresh peaches, diced
1 box Duncan Hines Yellow Cake Mix
1 stick Cabot Butter
Cinnamon, to taste

Spray tarte pan or baking dish with Pam
Layer diced peaches
Sprinkle cake mix over peaches
Sprinkle cinnamon to taste
Bake 350 degree oven for 30-35 minutes
Notes

Also can be made using canned peaches in heavy syrup

Serve with ice cream, whipped cream or hard sauce

Take Along Picnic Blueberry Butter Cake

This Blueberry Butter Cake recipe is always a crowd favorite and one of my favorite recipes to take along to parties, picnics and cookouts.  Either baked from scratch or with a cake mix, I like to make this sheet cake recipe for either Memorial Day, picnics, cookouts or the 4th of July, Labor Day or holidays,  and prepare it with fresh blueberries, but you can make it with blackberries, strawberries or any of your favorite fresh fruit berries that are in season.

This fresh blueberry cake recipe has a Secret Ingredient - The recipe calls for apple jelly, which gives it a nice glaze.

Easy and quick, this simple to make cake recipe was passed down to me years ago by one of my former co-workers, and each time I make of it I have fond memories of our working together.

Blueberry Butter Cake


3  c. all purpose flour, sifted
1/4 tsp. salt
3 tsp. baking powder
2/3 c. butter
1 c. granulated sugar, divided
1 tsp. vanilla extract
1 c. cold water
4 egg whites

(or one box of yellow butter cake mix)

*Topping:*

1 pkg (8 oz) cream cheese
3 tbl. milk
2 tbl. granulated sugar
1 tsp. vanilla extract
1 jar (4 oz) apple jelly
1 pint fresh blueberries (or blackberries or strawberries)
1 container heavy cream, whipped (or Cool Whip)
2 bl. granulated sugar

Preheat oven to 350.
Sift flour, salt and baking powder twice.
Cream butter and 3/4 c. sugar. Add vanilla to cold water.
Alternately combine water and flour mixtures with butter mixture; mix well after each addition. Beat egg whites until stiff, then beat in remaining sugar. Fold egg whites into batter.
Pour into well greased 13x9x2 oblong cake pan or sheet pan.
Bake in oven 30 min. or until toothpick is clean. (or follow cake mix directions)
Cool and Prepare topping.

*Frosting Topping:*
Beat cream cheese with milk, sugar and vanilla until of spreading consistency. spread over cooled cake. Melt jelly in saucepan over low heat. When completely melted, remove from heat. Clean berries and add to jelly, tossing lightly until well coated. Be careful not to crush berries. Distribute evenly over cream cheese.
Cover entire cake with whipped cream or topping mix. Cream can be sweetened with granulated sugar if desired.

Green Pistachio Pudding Cake Recipe | Cake Mix Desserts | Holiday Desserts

Lovely Shades of Green for the holidays!  Whip up this tasty Pistachio Cake for St. Patrick's Day, as a festive cake for Easter,  Christmas or anytime dessert! 

This Pistachio Pudding cake recipe has been around in my family for like, forever.  I'd make it for my co-workers when we had a potluck lunch.

It's equally as nice on a summer day out on the deck, or evening parties on the patio.  Make it for your next party or take along when entertaining.  It can easily be made as a sheet pan cake too.

Handmade Green Cotton Dish Cloths

Pistachio Pudding Cake Recipe 


Ingredients:

Cake:
1     package yellow cake mix
1     package instant pistachio pudding
4     eggs
 3/4 cup water
1/2 cup oil
Mix Well

Frosting - Beat Until Fluffy
1 cup cold milk
1 cup whipping cream
1     package instant pistachio pudding

or

Frost with Cool Whip which can be tinted with a shade of green food coloring

Preparation:

Add to eggs, water and oil, 1 package yellow cake mix and 1 package instant pistachio pudding.  Beat
on high speed for 5 minutes. Put in greased tube or bundt pan. Bake 55 minutes at 350.  Cool.
