Blueberry Buckle Recipe
2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 cup butter
1/4 cup sugar
1 egg
2 cups fresh blueberries
1/2 cup sugar
1/3 cup all purpose flour
1/2 tsp. ground cinnamon
1/4 cup cold butter
Granulated sugar (about 2 tsp.)
Whipped Cream (optional)
Grease a 9x9x2 inch baking pan; set aside
Stir together the 2 cups flour, baking powder and salt; set aside
In a medium bowl, beat together the 1/4 cup butter and the 3/4 cup sugar with an electric mixer on medium speed until combined.
Add egg; beat until fluffy.
Alternately add flour mixture and milk to egg mixture, beating at low speed after each addition just until combined. (Batter will be slightly thick.)
Gently fold in blueberries.
Spread Batter in prepared pan.
For topper, combine the 1/2 cup sugar, the 1/3 cup flour, and cinnamon.
Using a pastry blender, cut in 1/4 cup cold butter until mixture resembles course crumbs.
Sprinkle over batter; sprinkle with additional granulated sugar.
Bake in 350 degree oven for 40 minutes to 45 minutes or until top is golden brown and toothpick inserted in center comes out clean.
Serve buckle warm with whipped cream, if desired.
