Venus Pecan Pie | Best Baking Dessert Favorites | Easy Pecan Pie Recipe

Here's my favorite old-fashion recipe for Venus Pecan Pie. I make it every Thanksgiving and it's always a big hit.

During the holidays, gourmet gift baskets of fruits and nuts are always a welcome gift in our house. Pecans, pistachios, Italian chestnuts, clementines, oranges and grapefruit are healthy and enjoyable to snack on any time of year.

There's so many wonderful recipes to make with southern pecans or pralines - they can be crushed and used as toppings for bar cookies, sprinkled on ice cream, used in place of granola in your morning yogurt or added to Biscotti.

Every year we get together for a holiday dinner party with our friends from our boating days. We'd travel on vacation with them all over Long Island Sound and points beyond to Block Island, Watch Hill, Newport Rhode Island, Montauk, Greenport and through the Inter-Coastal Waterway to Fire Island, New York.

BEST PECAN PIE RECIPE

How To Make Venus Pecan Pie

3 eggs
1 c. Karo dark corn syrup
1 Tbl. butter, melted
1 tsp. McCormick Pure Vanilla extract
1 c. sugar
1 Tbl. flour
1/2 tsp. salt
1 c. Diamond of California Pecans (for the pecans - I like to partially chop some smaller for texture in my Pampered Chef hand chopper, and mix in some larger pieces)
1 8-inch or 9-inch pie shell

In a small mixing bowl, beat the eggs with a whisk until just mixed.
Add corn syrup, melted butter and vanilla to the egg mixture.
Mix the sugar, flour and salt, and add the to above mixture.
Grease pie pan or glass pie baking dish.
Place pecans on the bottom of an unbaked pie shell. Pour in the above mixture. Pecans will rise to the surface.
Bake in a preheated 350-degree oven for approximately one hour, or until piece crust edges are lightly brown. Cool completely on wire baking rack and refrigerate until ready to serve.

Pecan Pie Bars

*Note:  You can easily make this into Pecan Pie Bars, using the same filling but also substitute your favorite bar cookie dough base (cooked for 20 minutes in a 9 x 13 inch pan, then cooled) and pour the filling on top, cook for another 30 minutes, cool, then cut into bars.  Refrigerate.

Bakers German Semi Sweet Angel Chocolate Cream Pie Dessert

Every family has a favorite traditional Thanksgiving, Christmas or Holiday dessert dish.  This recipe for German Chocolate Cream Silk Pie brings back childhood memories for my husband and his family.  It's made with real whipped cream, and dark Baker's German Chocolate Cream Pie - decadent!

German Semi Sweet Angel Chocolate Cream Pie

German Chocolate Cream Silk Pie

While this classic chocolate cream pie can be made any time of year, I usually make it in the winter months when meringues won't "sweat" from the humidity in the air that New England is known for during the summer months.  But still, even in summer, it's always a treat.

You'll find me making it for the holidays such as Valentine's Day, Easter, Mother's Day, Thanksgiving, Christmas or New Years.

Frozen Lemonade Pie Recipe | Sweet Treat | Frozen Dessert

A Frozen Lemonade Pie recipe  is the perfect easy dessert on a hot summer day  (or anytime) and takes just 5 minutes to make! These pies freeze great.  When preparing for freezer cooking, it's  nice to have a second one on hand for whenever you need a quick dessert.

Frozen Lemonade Pie Recipe

We here in New England really enjoy lemonade, especially Del's Lemonade from Rhode Island!

Frozen Desserts

My friend in New Hampshire sent this lemonade pie recipe to me.  Just try it for a cool summer treat! The whole family, kids and grandchildren will enjoy it! Make it Pistachio Green for St. Patrick's Day too.

Frozen Lemonade Pie Recipe

I want to try some of the Bacardi mixes in this recipe for casual entertaining!

You used to be able to buy small cans of lemonade which made one pie but I can only find the large ones now. You can make 2 at a time and use the whole large can of lemonade. Try it also with fat-free Condensed milk and fat-free Cool Whip. My friend actually likes it better because it is not so rich.

Have the kids help in the kitchen, or surprise the kids or grandkids and make this frozen pie for a hot summer day using pink lemonade or for St. Patrick's Day or 4th of July lemonade!

In a mixing bowlicon, blend together partially thawed lemonade with Condensed milk. Add Cool Whip and thoroughly blend.
I also add a few drops of food coloring to intensify color–yellow for yellow lemonade, green for limeade or red for pink lemonade.
Spoon into crust and “make pretty”.
Invert plastic cover and seal around foil edges. Freeze.
Remove from freezer about 15 minutes before serving.
Garnish and decorate with a few raspberries and mint leaves or pipe whip cream on top if you want to go one step further.

No Bake Coconut Cream Pie | Eggnog Pie Recipe | Holiday Eggnog

Is there such a thing as leftover holiday eggnog in your house?  Well, sometimes there is.  If you're wondering what to do with it and not let that deliciousness go to waste, be frugal and try this Eggnog Pie recipe !

Holiday Eggnog Pie

No Bake Coconut Cream Pie Eggnog Pie

Drinking velvety Eggnog during the holidays is a tradition in many families.  Each Thanksgiving and Christmas holiday season I grew up drinking eggnog with a touch of nutmeg on top. As I grew older, I joined the tradition of eggnog mixed with good quality brandy (and a touch of nutmeg on top!) If there are still some Thanksgiving leftovers after the festivities have ended, enjoy this Coconut Cream Pie made with eggnog!

This coconut pie is delicious in summer too, just substitute light cream if eggnog isn't available.

Dream Whip Pie | Instant Pudding | Irish Dessert Recipe for SaintPatrick's Day

Saint Patrick's Day is celebrated on March 17th.  As my husband's family is Irish, we like to to get together with my daughters, son-in-law and grandkids to have our traditional boiled dinner of corned beef, cabbage, and carrots the Sunday before.  This year I surprised the grandchildren and made an easy recipe using Dream Whip Pie with green Pistachio pudding as our Irish dessert to top off the evening!

Dream Whip Pie

I found the cutest leprechaun St. Patrick's Day lollipops and used them to garnish the pie.  The grandkids were in their glory and enjoyed the special Irish dessert "treat"!

Instant Pudding Pie Dessert

This pie was an easy recipe to make, and can easily be adapted for any occasion or holiday - Valentine's Day, Birthday, Halloween, Thanksgiving or Christmas, just by changing the flavor of the pudding.

I always have boxes of instant pudding for Dream Whip recipes on hand in the pantry and Pillsbury pie crusts in the freezer.

You could use banana, chocolate or strawberry instant pudding and turn it into a quick dessert to bring to brunch or pot-luck dinners!

Fresh Peach Pie Recipe

My family likes to visit Lyman Orchards pick-your-own orchard and gather some fresh, ripe peaches and when we do I like to try my hand at making a Peach Raspberry Pie recipe.

There's always a family-friendly event going on at Lyman's in Middlefield, Connecticut- Winterfest, hot air balloon rides, cookout! Plus the fresh fruits and baked goods in the Apple Barrel market are yummy too.

Now that my daughter and her family have moved from the burbs out to Petticoat Junction, I also pass many a local farm stand along the way to visit them.

Fruit Pie

I like fresh berries when they're in season and also make a mean cobbler.  I thought the addition of the big red berries would add some color to the fruit filling.  Also, I added some mace in addition to the cinnamon and nutmeg spices.

Did you know that Connecticut is known as the "Nutmeg" state?
Unofficially (but popularly) Connecticut is also known as "The Nutmeg State".

The nutmeg connection to Connecticut may come from its sailors returning from voyages with nutmeg (which in the 18th and 19th centuries was a very valuable spice in New England). It is also said to come from Connecticut Yankee peddlers who would sell small carved nobs of wood shaped to look like nutmeg to the local Native Americans and other unsuspecting customers.

Peach Pie with Strawberries

Everyone's heard of Georgia Peaches, but this is my adaptation of a traditional Connecticut recipe. Treat your family or dinner guests to this summer fruit recipe idea for casual entertaining and serve it as a fresh fruit dessert and top with your favorite homemade ice cream, whipped cream, Cool Whip or non-dairy topping for a happy ending to your meal!

My mom was a SAHM, and was much better at making her own pastry pie crust. I, sadly, resort to using a pre-made frozen double pie crust that can be rolled out. Fortunately, my charming son-in-law is a peach himself, and will eat mostly anything that I bake!

Check out my recipe for peach dump cake!

Easy Double Crust Clam Pie Recipe | Easy Seafood Pie | Traditional New England Food

Now you can easily pretend you're at the seashore all year long by making this traditional New England seafood easy Clam Pie recipe to serve on the patio or under the gazebo on a hot summer night.

As a life-long native of New England, summer is synonymous with seafood, lobster and clams in particular. Whenever we head to the shore, I usually order clams from our favorite clam shacks or waterfront restaurants. I love all things coastal.

As we're in the middle of a heat wave here on the East Coast, recently my youngest daughter and her friend headed to Misquamicut Beach Rhode Island for a day of sun and fun. Misquamicut Beach is just over the border from Connecticut in Westerly, Rhode Island.  As it's directly on Block Island Sound, the  waves are huge and if you're athletic enough, body surfing is a favorite past time. There's plenty of things to do in Misquamicut for the whole family - there's restaurants, souvenir shops, music, and nightlife to enjoy.

Double Crust Clam Pie Seafood Pie

Traditional New England Food Seafood

I asked my daughter to please think of me if she was going to be enjoying some traditional authentic Rhode Island Clam Chowder (it's clear broth), clam fritters, Little Neck clams, clams on the half shell or fried clams for lunch!

I like to collect cookbooks, and here's a favorite easy seafood pie recipe for Clam Pie  from a cookbook that I've had since before I got married. You can even substitute picked Lobster meat if you prefer.

Easy clean-up with my handmade Dish cloths from Moomettes Crochet Shop!

Even if you don't live by the ocean, you can still find wonderful fresh seafood in local fish markets. It doesn't have to be summer to enjoy fresh fish dishes, you can serve up this clam pie recipe on your holiday buffet table too!

Clam Pie Recipe

2-1/4 c. flour
1 tsp salt
3/4 c. shortening
6 Tbl water, approximately
3 c. ground clams, preferably quahog clams
1/2 c. finely chopped onion
3/4 c. fresh cracker crumbs, preferably made from pilot crackers
Freshly ground black pepper, to taste
1/4 tsp. thyme
3/4 c. light cream

Preheat oven to 375 degrees
Combine the flour and salt in a mixing bowl. With a pastry blender or two knives, cut in the shortening until the mixture looks like coarse corn meal.
Sprinkle the water over the mixture, one tablespoon at a time, and mix lightly with a fork until all flour is moist.
With the hands, gather the dough into a ball and divide it in half. On a lightly floured board, roll out each half in a circle one-eight-inch thick and about one and one-half inches larger in diameter than the pie plate used. Line a nine-inch pie plate with one circle of dough, leaving one half inch overhanging.
Combine the clams, onion, crumbs, pepper, thyme and all but one tablespoon of the cream in a mixing bowl. Pour the filling into the pie plate. Cover with the remaining circle of dough and neatly trim the edges. Fold the edge of the top pastry under the edge of the lower pastry and seal by pressing together. Flute the edges, if desired. brush the top of the pie with the remaining cream, prick the top of the pie and bake forty minutes, or until golden brown and baked through.
