Cranberry Crisp Recipe | Church Supper

When I think of Cranberries, Cape Cod Cranberry Bogs come to mind.  Here's a recipe for a delicious Fall Cranberry Crisp that came from a Cape Cod Church Supper we went to many years ago. Perfect for Thanksgiving!

If I remember, Ocean Spray had a visitors' center up there someplace that we once toured.

When the kids were little when we'd visit Cape Cod, Massachusetts, we didn't have much money, and to extend our stay, would look for the old-fashion Church Suppers.  We'd also do the Fish Fry at the Elks club, or treat ourselves to a Lobster Fest held at a church in Wellfleet.

This Cranberry Cobbler recipe is from a Church Supper on Rt. 6 in Eastham.  We had a yummy bowl of New England Clam Chowder, rolls, beverage, and then dessert - all for about $6.00 which went to help support the church.  It was held once a week on Wednesdays I think.  The parking lot was always full.

 The kind ladies running the church supper also had the recipe already printed out because they had so many requests for it.

Cape Cod Cranberry Cobbler


Ingredients:
 
                  1     c. uncooked rolled oats
                1/2     c. flour
                  1     c. brown sugar
                1/2     c. butter
                  1 can (16 oz.) whole Ocean Spray Cranberry
               Sauce
                        Whipped cream/whipped topping

  Preparation:

               Mix together:  1 cup uncooked rolled oats, 1/2 cup
               flour, 1 cup brown sugar.  work in 1/2 cup of butter or
               margarine until crumbly.
             
               Press 1/2 of mixture into 8 x 8 greased baking dish.
                Cover with one can (16 oz.) of Ocean Spray Whole
               Cranberry Sauce.  Sprinkle rest of mixture on top. 
               Bake 45 minutes in 350° oven.  Garnish with homemade whipped cream.

 Serves 6-8

Here's my favorite old-fashion recipe for Venus Pecan Pie. I make it every Thanksgiving and it's always a big hit.

During the holidays, gourmet gift baskets of fruits and nuts are always a welcome gift in our house. Pecans, pistachios, Italian chestnuts, clementines, oranges and grapefruit are healthy and enjoyable to snack on any time of year.

There's so many wonderful recipes to make with southern pecans or pralines - they can be crushed and used as toppings for bar cookies, sprinkled on ice cream, used in place of granola in your morning yogurt or added to Biscotti.

BEST PECAN PIE RECIPE

How To Make Venus Pecan Pie

3 eggs
1 c. Karo dark corn syrup
1 Tbl. butter, melted
1 tsp. McCormick Pure Vanilla extract
1 c. sugar
1 Tbl. flour
1/2 tsp. salt
1 c. Diamond of California Pecans (for the pecans - I like to partially chop some smaller for texture in my Pampered Chef hand chopper, and mix in some larger pieces)
1 8-inch or 9-inch pie shell

In a small mixing bowl, beat the eggs with a whisk until just mixed.
Add corn syrup, melted butter and vanilla to the egg mixture.
Mix the sugar, flour and salt, and add the to above mixture.
Grease pie pan or glass pie baking dish.
Place pecans on the bottom of an unbaked pie shell. Pour in the above mixture. Pecans will rise to the surface.
Bake in a preheated 350-degree oven for approximately one hour, or until piece crust edges are lightly brown. Cool completely on wire baking rack and refrigerate until ready to serve.

*Note:  You can easily make this into Pecan Pie Bars, using the same filling but also substitute your favorite bar cookie dough base (cooked for 20 minutes in a 9 x 13 inch pan, then cooled) and pour the filling on top, cook for another 30 minutes, cool, then cut into bars.  Refrigerate.

Here's an easy dessert for after dinner on cool fall nights and winter.  This savory imitation rum-flavored Pumpkin Bread Pudding is sure to become a family favorite.

This recipe is traditional New England comfort food !  This bread pudding is baked in a water bath so that it sets well and will be easy to cut and serve.

Pumpkin Bread Pudding

6 c. dry whole wheat bread cubes
1/2 c. finely chopped walnuts, raisins or currents (optional)
3 slightly beaten eggs
1 (14 oz) can sweetened condensed milk
1 c. Libby's canned pumpkin
1/4 c. packed brown sugar
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 c. milk
1/4 c. rum (or 1 tsp. rum extract)
1/4 c. butter or margarine, melted
2 tsp. vanilla
Hard Sauce, Whipped Cream or Cool Whip (optional)

Combine bread and nuts in bottom of 12x7x2 baking dish.

Stir together eggs, condensed milk, pumpkin, sugar and spices. Gradually stir in milk; add rum,  butter or margarine and vanilla. Pour over bread layer.

Place dish in a 13x9x2 baking pan. Pour hot water into larger pan to a depth of 1 inch. Bake in oven for 50-60 min or until knife inserted just off center comes out clean.

Serve warm with hard sauce, whipped cream, whipped topping or ice cream.

Crockpot Bread Pudding Recipe | Vanilla Cinnamon Bread Pudding

This very easy Crockpot Bread Pudding recipe looks and tastes like you worked all day. Regular raisins can be used in place of golden raisins if you prefer. You can also add more cinnamon if you like. This  makes a tasty dessert any time of year, especially for Easter, Mother's Day, Thanksgiving or a Christmas pudding.

This is an old fashion bread pudding recipe that's been updated as an easy crockpot dessert.

The frost is on the pumpkin and winter isn't far behind! We love our bread pudding here in New England, especially when we're snowed in! Bread pudding was also one of MY grandmother's favorite frugal desserts. A Depression dessert, nothing was wasted, and often stale bread was used and turned into yummy desserts.

This bread pudding cooks in a water bath, very similar to my homemade Macaroni and Cheese recipe. Both set up firmly and very nicely.

This recipe is a great way to use up leftover bread, or even if you make your own Sourdough Bread like I do, freeze what's leftover to make this bread pudding.

Serve with a simple Hard Sauce.

Simple Bread Pudding Recipe


2 tbsp unsalted butter, melted and divided
6 slices of white bread cut into 1/2 inch cubes
1/2 C golden raisins
1 C of milk
1 (15 oz.) container ricotta cheese
1 C sour cream
2 eggs
1/2 C sugar
1 tsp grated lemon zest
1 tsp vanilla extract
1/4 tsp ground cinnamon

Coat a 1 1/2 qt. souffle dish with 1 tbsp of the melted butter.
Place the bread cubes into the soufflé dish.
Sprinkle the raisins in with the bread.
Pour the milk over the top and stir to coat the bread well.
Stir together the ricotta cheese and sour cream in a mixing bowl.
Add the eggs and mix until the eggs are blended in well.
Sprinkle in the sugar and lemon zest.
Add the extract and mix until all the ingredients are blended together well.
Pour the mixture over the bread and gently stir until combined.
Drizzle the remaining butter of the mixture.
Sprinkle the cinnamon over the top.
Cover the souffle dish tightly with foil and place in the bottom of the slow cooker.
Add enough boiling water to the slow cooker to go 1 inch up the side of the soufflé dish.
Lay a dish towel over the top of the slow cooker then place on the lid.
Cook on the high setting for 2 1/2 hours or until the internal temperature on an instant read thermometer reaches 140 degrees.
Remove the soufflé dish from the slow cooker and allow standing 20 minutes before serving.

Pumpkin Biscotti Recipe | Fall Desserts | Biscotti

Whether you're hosting a feast for the whole family or giving thanks with a few friends, it's easy to bring something to the Thanksgiving table that will bring everyone back for more!

It's Holiday Season once again.  The leaves have changed colors and started to fall from the trees, the Halloween candy has been in the stores since August and the kids are in school and have adjusted to their new routines.  Thanksgiving is just around the corner.  Creating a traditional Thanksgiving or Christmas meal is easy, and can be simple, even for a beginning cook.

Traditional Holiday Meal Preparation


Start with a shopping list.  For a family of four, a smaller turkey will fit the bill, take less time to cook and still provide plenty of left overs for those delicious cold turkey sandwiches the next day.  A basic list will include the turkey, of course, cranberry sauce, gravy, stuffing, sweet potatoes, and for some families - green beans and French fried onions for a casserole. Try this Pumpkin Biscotti recipe or crescent rolls with butter are a great addition as well.  Don’t forget the pumpkin pie, homemade pumpkin ice cream, pumpkin trifle, pumpkin bread pudding or pumpkin cream cheese bars and the whipped cream!

Purchase the items on your list 3-4 days before the big day.  This will give your turkey plenty of time to defrost if it is frozen.  Always allow the turkey to defrost over the course of a few days in the freezer, rather than sitting it out on the counter for hours.  This will prevent bacteria from developing, which can cause food poisoning.  No one wants food poisoning.  If the turkey is still slightly frozen on Thanksgiving, place the plastic wrapped turkey in the sink and run cold water over it for a while.  This will help speed defrosting.


After the turkey is defrosted it is time to prep it for cooking.  Preheat the oven to the manufacturers recommended temperature.  Remove the plastic wrapper from the bird and discard it.  Remove the wrapped package that is in the turkey and place it to the side.  This is the innards and the neck and can be used later to make other things.  Rinse the turkey in cold water and remove any remaining feathers by pulling them out.  If they are hard to get out, grab a pair of pliers to remove them.  Pat the turkey dry with paper towels and throw them out.  Place the turkey, breast side up, on a rack in a deep roasting pan.  For a crispy and delicious skin, melt a half stick of butter and brush it on the turkey, making sure to get all of the parts including the wings and legs.  After coating the turkey with the butter, sprinkle garlic powder and black pepper all over the bird, again getting the wings and legs.

After seasoning the turkey, place it in the preheated oven.  Checking it frequently, allow the turkey to bake for the correct amount of time as indicated by the label.  Once the skin begins to brown, pull the turkey out for a minute and baste it with 2 cups of turkey broth.  Cover the turkey with foil at this time and return it to the oven.  Baste it every 30 to 40 minutes with the juices from the pan, recover and return it to the oven.  You may be wondering about the stuffing.  Well, to be on the safe side and because crispy stuffing just tastes better, these instructions call for the stuffing to be prepared separately in a baking dish.  Stuffed turkeys can be havens for bacteria and can cause both the stuffing and the turkey to be undercooked.

About 1 hour before the turkey is scheduled to be done, begin preparing the other dishes.  The stuffing can be made using chicken or turkey broth to add additional flavor.  After preparing the stuffing on the stove top, spread it out evenly in a baking dish and place it in the oven below the turkey.  This will give the stuffing a crispy top layer, with a softer layer underneath.

A delicious alternative to plain jellied cranberry sauce is to mix whole berry cranberry sauce with a can of drained pineapple tidbits.  The pineapple adds a unique flavor to the sauce and goes well with the turkey and stuffing.  Another great side dish is a green bean casserole, made with fresh string beans, cream of mushroom soup and topped with crunchy fried onion strings.

For the sweet potatoes, a casserole is another great way to go.  After cleaning and taking off any bad parts, take your sweet potatoes, cut them up into 1-2 inch chunks and place in a microwave safe bowl.  Add 3 tablespoons of butter, also in chunks, to the bowl.  Microwave on high for 4 minutes, then stir or mash the potatoes and butter together in the bowl.  Return it to the microwave for an additional 4 minutes, then remove and stir again.  To the sweet potato and butter mash, add cinnamon and sugar to taste, stirring to mix it thoroughly.  Once it is mixed, place the mixture into an oven safe baking dish.  Top with granola and miniature marshmallows and bake for 15 minutes, or until the marshmallows are melted and browned.

By now, the turkey should be done.  Most turkeys come with a pop-up timer.  If it has not popped yet, keep checking every 5 minutes until it does.  Once the timer is popped, remove the turkey from the oven and put in the green bean casserole and biscuits.  Place the turkey on a safe surface and keep it covered for at least 20 minutes with aluminum foil.  This allows the turkey to rest, reach its maximum cooking temperature and gives the juices a chance to settle back into the meat.  Carving a turkey as soon as it is removed from the oven is a sure way to lose all of the juices and get a dry bird.

After the turkey has rested, and the rest of the dishes have come out of the oven, it is time to carve the bird.  Start by removing the legs and wings.  After slicing with a sharp knife in the joint of each piece, using a bit of force, bend it backward until you hear a crack.  You can then slice through the rest of the way, creating clean cut pieces.  Once the parts are removed, you can begin slicing the breast meat.  Using a sharp knife, slice the meat into thin layers and stack onto a serving dish.  Surround the white meat with the legs and wings and serve.

Everyone has different variations on their traditional Thanksgiving meal.  Any of the above recipes and ideas can be modified for your family’s preferences and dietary needs.  The most important part of preparing for any Holiday meal is not that you enjoy the prep work, the cooking and the eating but that you enjoy spending this important time with your family and friends.

Pumpkin Biscotti Recipe


Here's my sister-in-law's Biscotti recipe:

PUMPKIN BISCOTTI


Ingredients: 

In a bowl whisk together:
                  4       -1/2 c. flour
                  1 tsp   baking powder
                  1       tsp. baking soda
                1/2       tsp. salt
                       
Beat with an electric mixer until well combined:
                  2 large eggs
                  1       -3/4 c. sugar
                3/4       c. vegetable oil
Beat in:
                1/2       c. Canned Pumpkin (not puree) (or you can leave the pumpkin out if you choose)
                  1       tsp. vanilla
                1/2       tsp. nutmeg
                1/2       tsp. cinnamon
                Walnuts or slivered Almonds (if desired)
       
                 
 Preparation: 

               Add flour mixture gradually, beating until mixture
               forms a dough.  Stir in:  1/2 c. walnuts or almonds (if desired)
             
               Turn dough out onto a lightly floured surface and
               divide into 3 pieces.  Don't knead the dough, it will
               make it tough.  Dough will be sticky.
             
               Form each piece into a log about 14 x 2 x 2 and
               arrange a few inches apart on a large, lightly oiled
               baking sheet.  Brush logs with egg wash and bake
               in middle oven, 350°, about 25 minutes.
             
               Egg wash:  1 large egg yolk with 1 tsp. water.
             
Tips:
             
               Bake two abreast.
             
               For crunchier results, bake a second time, after
               slicing, for 15 minutes.
