Stuck on what to bring to an impromptu party invite?  Hosting your own last-minute get-together?  This healthy Spinach Dip recipe can be made ahead, or even last minute, and will please most everyone.  Make it your own with your favorite seasonings, and you probably will have most all of the ingredients already on hand.

If you grow your own spinach from your garden, it's a perfect way to use those fresh veggies, too!

Spinach Dip Recipe

  Ingredients: 

1 package frozen chopped spinach, thawed and well drained

1-3/4 cup mayonnaise

 1/2 cup  chopped green onion, scallion or chive

1/2 cup  chopped parsley

 dash of salt, to taste

dash of pepper, to taste

Preparation: 

Make the day before.  Cook spinach and drain well.  
Chop into smaller pieces if necessary either with a chopper or by hand
Mix with 
remaining ingredients
Refrigerate for awhile
Serve with a firm cracker, pita chips,

What’s a party without food? Back by popular demand, as promised, I said I'd have some Retro foodie ideas for a brunch buffet, wine and libations set out and waiting for you!

This is one of my favorites from when I belonged to the Woman's Club, where I was a board member. As a fundraiser, we put together a cookbook, and this recipe was very popular.

It's a great healthy salad that's quick and easy to prepare. Make it ahead of time, and let set-up in the refrigerator overnight. Present it in a pretty crystal glass trifle bowl so that you can show off the layers of your delicious creation!

The flavors just meld together and it's always a big hit at all those summer picnics, pool parties, family gatherings and holiday buffets.

Overnight 7 Layer Spinach Salad


In a large bowl layer:
1 lb spinach, stemmed and torn
sprinkle with salt and pepper
1/2 lb bacon, crumbled
6 hard cooked eggs, crumbled
1 head iceberg lettuce, torn
1 box frozen peas, thawed but uncooked
1 medium Bermuda onion sliced thin, optional

Mix together and spread over top like frosting:
2 c. mayonnaise
1 c. sour cream
1 package Green Goddess salad mix (if you cannot get this, use Italian mix)

Garnish with strips of Swiss cheese (optional)

Cover and refrigerate overnight.  This is a must.

Serves 10

Quiche Pie | Quiche Lorraine | Easy Party Food

If you're looking for an easy for breakfast, lunch or dinner, or even to make and take dish to a brunch, party or buffet, a retro Quiche Lorraine Pie is perfect ! Keep a few simple, basic ingredients on hand in the kitchen, and wow your hosts.

Quiche also makes a terrific breakfast, lunch or simple dinner. Try variations of ham and cheese, or Mexican salsa. And yes, real men DO eat quiche !

This basic quiche recipe is a favorite given to me by a co-worker from my days when we had buffet office pot lucks.

Here are several different varieties - Ham and Cheese and Spicy Mexican - all simple to make for your lunch, brunch, or easy supper. Add a homemade soup such as Butternut Squash Soup and you have the perfect comfort food brunch for yourself or guests!

Quiche is an easy go-to casserole dish to make and is adaptable for breakfast too! You can use whatever leftover or fresh veggies you have on hand to make it a Mediterranean Diet friendly version.

Ham Quiche is a great way to use up your leftover Easter Ham, Christmas Ham or Holiday Spiral Ham!

Quiche Pie


1  Packaged Pie Crust (or you can make your own)
                  1   c. evaporated skim milk
                  4   eggs ( or use egg beaters)
                1/2   tsp. dry mustard
                1/4   tsp. pepper
               ** See choices
                   
*Ham & Cheese*
1   c. diced ham
1   -1/2 c. sharp cheddar cheese, grated
1   green pepper, diced
1/4   c. onion, diced
                   
*Mexican*
1   Jar Salsa (hot or mild)
1   -1/2 c. cheddar cheese (or Mexican cheese), shredded
choice of any spices

Heat oven to 350°
             
Line pie pan or quiche baking dish with crust.
Mix milk, egg, mustard and pepper and any other spices which you like.
Pour egg mixture over the above.
Bake 40-50 minutes.
Cool 5 minutes and cut into wedges.

Serve this warm Pizza Dip recipe with warm tortilla shells cut into triangles or bread sticks with this dip.  Tortilla or nacho chips can also be served. This Warm Pizza Dip is just the thing for casual entertaining or a night at home with the family.

Warm Pizza Dip


What You Need:

1 (8 oz) pkg. cream cheese, room temperature
1/2 C sour cream
1 t oregano
1/2 C pizza sauce
1/2 C pepperoni, chopped
1/2 C green pepper, chopped
1/4 C green onion, chopped
1/2 C mozzarella cheese, shredded

How to Make It:

Place the oven temperature on 350 degrees and allow to heat while mixing up the dip.
Place the cream cheese, sour cream and oregano into a large mixing bowl.
Use an electric mixer on low speed and blend the ingredients together well.
Spread the mixture into the bottom of an ungreased 9 in pie plate.
Spread the pizza sauce over the top of the cream cheese mixture.
Place the pepperoni, green pepper and onion into a mixing bowl and toss to combine.
Sprinkle the pepperoni and vegetable mixture evenly over the pizza sauce.
Bake for 10 minutes.
Remove from the oven and layer the cheese over the top.
Return to the oven and bake an additional 5 minutes or until the cheese has completely melted.

Serving Size: 2 C

Blueberry Ambrosia Salad | Fresh Fruit Pineapple | Jello Fluff

When I went to my niece's baby shower here in Connecticut, for the brunch, I brought along an easy favorite Jello Fluff Ambrosia Salad of fresh fruit.  What's nice about Ambrosia Fluff is that it can double as a dessert too. Make is with cranberries for Thanksgiving, Pineapple for Easter - use your imagination!

It was a perfect day and lunch was served on the lovely Veranda porch in a historic home in one of Connecticut's oldest towns.

It was quite warm for a New England day in spring, and at the baby shower we enjoyed a luncheon buffet of grilled eggplant, fresh spring asparagus and zucchini along with the most yummy chicken salad made  with cranberries and walnuts.

My Jello Ambrosia recipe is an easy yet simple, elegant brunch trifle dessert or side dish made from Jello, fresh fruit, marshmallows and whipped cream or Cool Whip - perfect for baby or bridal shower luncheons, buffets, picnics or a get-together on the deck!  Serve it or take it in a pretty clear glass Trifle Bowl or Punch Bowl! I made this sweet dessert with fresh blueberries and pineapple.

For any holiday such as Halloween, Thanksgiving, Christmas , family gathering, party or cookout, you can make this with dried cranberries, strawberries, strawberry, orange, pistachio or raspberry Jello or use your imagination and add the berries or nuts of your choice!

Ambrosia Jello Fluff Holiday Dessert - Jello Delight


1 pint whipping cream or 2 containers of Cool Whip Topping
2 large packages of Lime Jello (or flavor of choice)
2 large cans of Pineapple chunks, drained
2 containers of fresh Blueberries

Thicken jello according to package directions until jellied.

If using fresh whipped cream, whip chilled whip cream.

Add 1/4 cup of confectioner's sugar to sweeten.

Drain juice from Pineapple.

After Jello has reached jelly stage, using electric beaters, whip until fluffy. Either fold in whipped cream, or fold in Cool Whip (whichever you are using.)

Fold in Pineapple, Blueberries and Walnuts.

Refrigerate until ready to serve.

Corned Beef Reuben Mini-Sandwich


What You Need:

1 (20 in) loaf of French bread cut in half horizontally or Party Rye Bread
1/2 C Thousand Island dressing
1/2 lb corned beef, sliced thin
8 (1 oz) slices of Swiss cheese cut into 2 in long slices

How to Make It:

Turn on the broiler and allow it to heat while preparing the mini-sandwiches.
Line a broiler pan with aluminum foil.
Spread the dressing on the open side of the bread.
Layer the bread halves with the corned beef and Swiss cheese slices.
Broil the mini-wiches 6 in from the heat for 5 minutes or until the cheese has completely melted.
When cool enough to handle cut each side of bread into 2 in pieces.

Serving Size: 24

Sausage and Cheese Party Spread | Sun City Sausage Spread Appetizer

Serve this tasty Sausage and Cheese spread sliders with crackers or on Rye bread party rounds, mini bagels or English Muffin halves. Great for your Charcuterie Board.

Another name for it was Sun City Sausage Spread back in the 1970s! My mom used to serve it on mini bagels that were cut in half and we'd enjoy it when watching the football games on TV.

This can be made ahead of time and kept in the freezer until ready to use. To reheat place in a microwave safe bowl and microwave on high 2 minutes or until completely heated through, stirring occasionally.

Serve at your next casual gathering, or bring to a tailgate party during Super Bowl, March Madness or any Game Day!

Sun City Sausage Cheese Party Spread


1 lb hot Italian sausage (or substitute 1 lb. ground beef for either of the sausage meat)
1 lb Velveeta cheese, cubed
1/4 t garlic powder
1/4 t Worcestershire sauce

Crumble both types of sausage into a large saute pan skillet.
Over medium heat cook the sausage 8 minutes or until completely browned.
Drain the fat from the sausage.
Return the drained sausage to the skillet.
Turn the heat to low and add the cheese cubes.
Stirring often allow the cheese to melt completely.
Stir in the garlic powder and Worcestershire sauce.
Remove from the heat, place in a serving platter and serve warmed up.
You could also spread this on the bagels and then freeze. I like to use my FoodSaver Vacuum Sealer Machine to freeze, then heat, place under broiler until bubbly.

Reindeer Christmas Mix | Holiday Muddy Buddies | Peanut Butter Free

This Holiday Muddy Buddies Mix is a party favorite of my family ! It's easy and quick, made with Chex cereal and Chocolate !  Package the Reindeer Christmas Mix up in pretty cellophane bags or tins for family and friends !

My husband isn't a fan of peanut butter, so I adapted this recipe to make it peanut-butter free.

We still like peanuts in our Muddy Buddy Mix, but you can leave them out if you prefer.  Whether you use Dark Chocolate or White Chocolate, it's unanimous in our family that this is one of the best snack mixes  during the holidays !

I always try to find my ingredients at Aldi for the best prices.

Handmade Cotton Dish Cloths


Muddy Buddy Mix



1 box (12.8 oz.) (about 13 cups) Rice Chex, Corn Chex Wheat Chex or Chocolate Chex cereal (or combination)
2 cups semisweet chocolate chips
Pretzels
Peanuts
¾ cup creamy peanut butter, optional
Or use 1/4 to 1/2 cup Corn syrup
6 tablespoons butter, cut into smaller pieces
1½ teaspoons vanilla extract
2 cups powdered sugar
1 cup Holiday M&M's

Melt chocolate chips in double boiler, add butter and corn syrup, stirring until smooth
Add Vanilla Extract
In a large bowl or stock pot pan, add Chex Mix, peanuts, M&Ms, Pretzels
Mix in chocolate mixture until all is coated
Stir in Powdered Sugar, 1/2 cup at a time until well coated
Layer in parchment lined cookie sheet
Refrigerate until firm
Break into pieces
Place in air-tight container and store in

Our family serves quite a bit of cheese, not only during the holidays, but throughout the whole year.  My mother-in-law owned a cheese and gourmet food store, long before grocery stores had entire sections devoted to domestic and imported cheeses. I worked the store as a manager on the days when my mother-in-law wasn't available, so I know quite a bit about cheese and appetizer recipes, and recognize the best cheddar cheese when I see and taste it!

On a beautiful fall day while in Vermont visiting my son-in-law's parents, we toured the Cabot Cheese Visitor's Center, and took the tour of the factory while in Cabot, Vermont. It was interesting to learn about co-ops and to see how cheese is made.

At our Visitors Center in Cabot, where we began in 1919, you can join a factory tour, watch talented cheese makers create our award-winning cheddars, and enjoy plenty of samples — all in one of the most scenic spots in America. Our visitors say the drive alone is worth it!

Here’s one of my favorite appetizer ideas for either crab meat or lobster canape recipes made with  melba toast or Wasa crackers that we like to serve in New England. Add it to your Charcuterie Board when entertaining!

With the first signs of spring evident in the budding trees, longer days, and warmer air, many of us begin planning summer vacations, trips to the beach, and looking forward to spending time outdoors.  These signs call to mind the start of bathing suit season, which can be daunting after a long, cold winter indoors, indulging in heavy foods and drink.



Old London, the makers of delicious melba toast products, would like to help us fit in those summer clothes by encouraging us to include healthy, simple foods in our everyday menus.  Their famous snacks, made with all-natural ingredients and whole grains, prove a great way to satisfy mid-day hunger when paired with light treats like salsa or cheese.

Whether served on the terrace, Great Gatsby style, or poolside on your deck or patio, it’s magnificent in the summer, but can be served all year long too! Perfect for holiday parties, Christmas, New Years or family celebrations.

Crab Meat or Lobster Dip Appetizer Seafood Canape 


3 Tbl. butter
1/2 c. freshly grated Parmesan cheese
1 egg yolk
3 Tbl. dry sherry
1/8 tsp. cayenne pepper
1/2 tsp. Worcestershire sauce
1-1/2 c. cooked lobster meat or crab meat, finely chopped
48 1-1/2 inch to 2 in. rounds toasted bread, Old London Melba Toast or Wasa

1.  Preheat the oven to 425 degrees.
2.  Cream the butter and cheese together.  Stir in the egg yolk, sherry, cayenne and Worcestershire.  Add the lobster and mix well.
3.  Place a spoonful of the lobster mixture on each toast round.  Place on a baking sheet and bake 5 minutes.

Yield:  4 dozen
