Here are several different varieties - Ham and Cheese and Spicy Mexican - all simple to make for your lunch, brunch, or easy supper. Add a homemade soup such as Butternut Squash Soup and you have the perfect comfort food brunch for yourself or guests!
Quiche is an easy go-to casserole dish to make and is adaptable for breakfast too! You can use whatever leftover or fresh veggies you have on hand to make it a Mediterranean Diet friendly version.
Ham Quiche is a great way to use up your leftover Easter Ham, Christmas Ham or Holiday Spiral Ham!

1 Packaged Pie Crust (or you can make your own)
1 c. evaporated skim milk
4 eggs ( or use egg beaters)
1/2 tsp. dry mustard
1/4 tsp. pepper
** See choices
*Ham & Cheese*
1 c. diced ham
1 -1/2 c. sharp cheddar cheese, grated
1 green pepper, diced
1/4 c. onion, diced
*Mexican*
1 Jar Salsa (hot or mild)
1 -1/2 c. cheddar cheese (or Mexican cheese), shredded
choice of any spices
Heat oven to 350°
Line pie pan or quiche baking dish with crust.
Mix milk, egg, mustard and pepper and any other spices which you like.
Pour egg mixture over the above.
Bake 40-50 minutes.
Cool 5 minutes and cut into wedges.
