Corned Beef Reuben Mini-Sandwich
What You Need:
1 (20 in) loaf of French bread cut in half horizontally or Party Rye Bread
1/2 C Thousand Island dressing
1/2 lb corned beef, sliced thin
8 (1 oz) slices of Swiss cheese cut into 2 in long slices
How to Make It:
Turn on the broiler and allow it to heat while preparing the mini-sandwiches.
Line a broiler pan with aluminum foil.
Spread the dressing on the open side of the bread.
Layer the bread halves with the corned beef and Swiss cheese slices.
Broil the mini-wiches 6 in from the heat for 5 minutes or until the cheese has completely melted.
When cool enough to handle cut each side of bread into 2 in pieces.
Serving Size: 24
