Corned Beef Reuben Mini Sandwiches Appetizers

You won''t need a special occasion to enjoy freshly made corned beef. Many believe that eating corned beef at New Years will bring them luck for the coming year. Or, enjoy all year long!

Corned Beef Reuben Mini-Sandwich


What You Need:

1 (20 in) loaf of French bread cut in half horizontally or Party Rye Bread
1/2 C Thousand Island dressing
1/2 lb corned beef, sliced thin
8 (1 oz) slices of Swiss cheese cut into 2 in long slices

How to Make It:

Turn on the broiler and allow it to heat while preparing the mini-sandwiches.
Line a broiler pan with aluminum foil.
Spread the dressing on the open side of the bread.
Layer the bread halves with the corned beef and Swiss cheese slices.
Broil the mini-wiches 6 in from the heat for 5 minutes or until the cheese has completely melted.
When cool enough to handle cut each side of bread into 2 in pieces.

Serving Size: 24
