Buttermilk Irish Soda Bread | Homemade Bread Recipe

Irish Soda Bread is just the right comfort food any time of year! Not just for spring St. Patrick's Day holiday celebrations, enjoy it fresh out of the oven on cool, crisp fall days, or bake up a batch on a winter snowy morning! Easy to make in multiple batches, this traditional family favorite homemade Buttermilk Irish Soda bread recipe is made with Buttermilk to give it a rich taste and texture.

My husband's family is Irish and my mother-in-law taught me how to make Irish Soda Bread from scratch. While there are many Irish soda bread buttermilk recipes out there that can be made in a breadmaker, this one is so easy I prefer to knead it myself eat straight out of the oven! Since it makes three loaves, give one to family or friends! This traditional Irish Soda Bread recipe was shared with me by a co-worker quite some years ago.  Serve it with your favorite Saint Patrick's Day food or beverage of choice!

Buttermilk Irish Soda Bread


9     c. all purpose flour
3 1/3     c. sugar
1 tbl salt
1 tbl baking soda
2 tbl baking powder
2 tbl caraway seeds
2     c. raisins (or currants)
6     eggs
1     c. melted butter or vegetable shortening
2     c. sour cream
1     c. buttermilk

Mix or sift together flour, sugar, salt, baking soda, baking powder and caraway seeds.  Stir in raisins.

In a second bowl with a wire whisk, beat together eggs, lard, sour cream and buttermilk.

Combine the two mixtures, stirring just until moistened; do not over mix.  Turn dough into three greased loaf pans.  Bake at 350° about 1 hour.  Makes 3 loaves

Boston Brown Bread Recipe | St. Patricks Day | Homemade Bread

This is a recipe for Boston Brown Bread, a New England favorite.  Serve all fall and winter together with some homemade soup or franks and beans for an old-fashion Saturday night supper.

Of course, most old-time New England folk serve the traditional IIrish Soda Bread along with their favorite corned beef and cabbage dinners or Shepard's Pie on St. Patrick's Day. I also have another Breadmaker Irish Soda Bread that's delish, too.

It has really been rough trying to find Brown Bread, either with or without raisins in the grocery stores.  It was a favorite of our with Hot Dogs and Beans (Saturday night supper) when I was growing up.

When I was growing up, we always had Boston Brown Bread and Hot Dogs and Baked Beans as a supper about once a month.

This easy recipe for homemade bread can be whipped up in just about an hour!

Serve with a side dish of your favorite Baked Beans recipe, or as a dipping bread along with my Irish Pub Corned Beef Dip recipe !

Cotton Handmade Dish Cloths

Boston Brown Bread


2 cups buttermilk
3/4 cup molasses
1 cup graham flour
1 cup white flour or whole wheat white flour
1 cup yellow corn meal
1 cup raisins
1/4 cup melted shortening or EVOO
1 teaspoon soda
1 teaspoon salt

Combine the ingredients and bake for one hour in a greased loaf pan in a 350 degree oven
Notes

You may add a handful of raisins or currents if desired. Graham flour, a/k/a whole meal flour or whole wheat flour

This easy recipe for Double Chocolate Chip Banana Bread does double-duty for breakfast, brunch or dessert.

Homemade bread is always a treat. My daughters are always asking me to make banana bread. Both think this is the best banana bread because it's double chocolate, made with cocoa chocolate and chocolate chips. My charming son-in-law likes plain banana bread. Sweet bread is really pure comfort food and goes well with a glass of milk or your morning coffee.

I like to double the recipe and freeze several. Mini loaf pans are the perfect size if you're bringing a hostess gift.

We prefer the mini semi sweet chocolate morsels in this dessert bread.  The addition of cocoa powder gives this chocolate banana bread a nice, rich chocolate flavor.  You can add nuts if your family likes them.

If chocolate's not your thing, I have a terrific recipe for a quick, plain, simple banana bread.

This banana bread can be sliced and then freeze and seal using my Food Saver Vacuum Sealing machine for quick breakfast or impromptu snack.  They're easy to defrost in the microwave in a pinch.

Chocolate Chip Banana Bread Recipe


1 cup sugar
2 eggs
1/3 cup vegetable oil
1 1/4 cups ripe, mashed bananas (about 2-3)
1 teaspoon vanilla extract
1 1/2 cups King Arthur flour
1/2 cup Hershey's cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup Nestle mini morsel semi sweet chocolate chips
1/2 cup crushed walnuts (optional)

Heat oven to 350.
Spray bottom of 8x4 inch loaf pan with cooking spray.
Beat sugar, eggs, and oil in large bowl at medium speed until combined.
Beat in banana and vanilla at low speed.
Combine flour, cocoa, baking soda and salt in a medium bowl; beat into banana mixture at low speed just until combined. Stir in chocolate chips.
Spoon batter into pan.
Bake 60-70 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes.
Remove from pan; cool completely on wire rack.

Dill Seed Onion Bread Recipe | Yeast Bread | Homemade Dilly Bread

This herb Dill Seed Onion bread is my absolute favorite bread.  My mother always made it when I was growing up.  We called it Dilly Bread in our house, because of the delicious smell of Dill when cooking !

Slather with real butter (I like Kerry Gold with Olive Oil) or some cream cheese and serve with some tea or hot cocoa.

Handmade Cotton Dish Cloths

HERB DILL SEED ONION BREAD


Ingredients:

1 packet active dry yeast
1/4 cup    warm water
 1 cup    creamed cottage cheese, heated to luke-warm
 2 tbl    sugar
1 tbl    instant minced onion
1 tbl    butter
2 tsp    dill seed
1 tsp    butter
1 tsp    salt
1/4  unbeaten egg
 2 1/4 to 2 1/2 cup flour

Preparation:

Soften yeast in water.
Combine in mixing bowl  cottage cheese, sugar, onion, butter, dill seed, salt,  soda, egg and softened yeast.
Add flour to form a stiff dough, beating well after each addition.  Cover.
 Let rise in warm place 85  to 90f. until light and double in size, about 50 to 60 min. Stir down dough.
Turn into well-greased 8 inc. round 1 1/2 or 2 qts. casserole.
Let rise in warm place until light, 30 to  40 min. Bake at 350 for 40 to 50 min. until golden               brown.
Brush with soft butter and sprinkle with salt.
 Makes 1 round loaf.

Are you wondering what to do with all those wonderful summer zucchini?  Here's my favorite recipe for traditional, moist old-fashioned homemade Zucchini Bread.

This Zucchini Bread recipe also freezes well. It's great to keep on hand for unexpected company.

My favorite to use is a Nordic Ware bread pan but there are many other good ones out there.  Then I use my Food Saver Vacuum Sealer to keep this yummy bread throughout the winter months.

Tip:  Short on eggs?  Substitute 1 Egg = 1 TBL. Flax Seed Meal + 2 TBL. Water (let sit 5 minutes)

Homemade Zucchini Bread Recipe

2 cups grated zucchini
2 eggs
4 tbsp. melted butter
1 cup milk
1 2/3 cup sugar
2 tsp. vanilla extract
3 cups flour
2 tsp. baking soda
1 tsp. salt

Sometimes I like to add chocolate chips to my zucchini batter.

Preheat your oven to 350 degrees Fahrenheit and grease the bottoms of your loaf pans. You do not need to grease the sides.
Mix your zucchini, eggs, butter, milk, sugar and vanilla extract in your large mixing bowl.
Add the remaining ingredients. Stir briefly until the flour is moist but still a bit lumpy. Do not mix the batter until it's completely smooth. This will result in tough, chewy bread.
Pour the batter into your loaf pans and bake for approximately one hour. Let the zucchini bread cool for 15 minutes before serving.

Old Fashioned Dill Seed Onion Bread Recipe| Dilly Bread

This wonderful Homemade Dill Seed Onion Bread recipe was always my favorite as a child ! My mom would make it all of the time.

The aroma of the herbs waifs through the entire house as the bread is baking!  Spread some unsalted or whipped butter on it and enjoy!  A New England favorite! You can also freeze a few loaves of bread for guests.
