Banana Muffins | Cake Mix Banana Muffins | Easy Quick Recipe

Normally I make my own banana bread recipe, but this one turned out just as yummy, and with Banana Bread Muffins, each grandkiddo gets their very own bite of deliciousness.

Three grandkids were living here while waiting for a closing on their new house and we were snowed in with Blizzard Bobby taking place off the coast of New England. 

A great way to entertain the kids (and feed them too) is to have them help make something yummy in the kitchen.  I like to incorporate math and reading skills when we cook too. 

However, I'd been baking quite a bit, and wanted to make it simple, so my favorite go-to is to start with a doctored up cake mix recipe.

The kids took turns mashing the bananas, stirring, and adding in chocolate chips!

Cake Mix Banana Muffins Recipe


 3-4 very ripe bananas 
1 box (15.25 ounces) yellow cake mix (I had Aldi brand on hand)
2 large eggs
1 tsp. pumpkin pie spice mix
1 tsp. cinnamon
1 tsp. vanilla
1 c. chocolate chips

Line cupcake pan with 12 paper liners.

Mix all together and bake in 350 degree oven for 45-50 minutes or until toothpick comes out clean

Triple Chocolate Brownie Squares couldn't be any easier to make and are great for kids or grandkids learning to cook! Perfect for sheet pan any Holiday or party food ! Oh so simple, but delicious!



Triple Chocolate Brownies


This recipe was given to me by a former co-worker when we shared a lunch table.  His wife would make it, and it was his favorite!  He always raved about his wife's cooking~  Warms my heart.

Sheet Pan cooking is so easy, especially when you have a quality sheet pan! 

Triple Chocolate Brownies Sheet Pan Recipe


Triple Chocolate Squares

Equipment:
Mixing Bowl
Wooden Spoon
Saucepan
Sheet Pan
Cookie Sheet
Cooling Rack

Ingredients:

1    box regular chocolate cake mix
1    box chocolate pudding (cook type, not instant)
6    oz chocolate chips (12 oz is better)

Preparation:

Cook pudding according to package directions. 
Pour in dry cake mix and stir until smooth and shiny. Add your favorite goodies (chocolate chips, raspberries, nuts, whatever)
Spread on 10 1/2" x 5" cookie sheet (spray with nonstick spray or line with parchment paper).
Sprinkle with chocolate chips and bake for 18 min. at 350 degrees oven. 
Place on cooling rack to cool.  Cut into squares.

This recipe for a chocolate caramel bar was given to me by a coworker. It's truly a rich, chocolate creamy caramel goodness fix. And you wouldn't believe it starts with a doctored cake mix!

German Chocolate Caramel Bars


Ingredients:

                  1     pkg. German Chocolate cake mix
                  1     -1/2 c. chocolate chips (1 bag)
                  1 bag caramels (melt in top of double boiler)
                  1     c. chopped nuts (optional)
                1/3     c. evaporated milk
                3/4     c. melted butter
                1/3     c. evaporated milk

  Preparation:

               Combine caramels and 1/3 c. evaporated milk in
               saucepan and melt.  Set aside.  Mix by hand: Cake
               mix, butter, 1/3 c. evaporated milk, and walnuts.
               Batter will be very thick.  Spread 1/2 batter in
               greased 9x13 cookie sheet pan.  Bake 350 for 6 minutes.
               Sprinkle chocolate chips over crust, drizzle caramel
               over mixture.  Spread remaining batter over it (use
               hands if necessary).  Return to oven for 18-10 min.
               Cool and refrigerate 30 min. to set caramel then cut.
               Put cookie sheet underneath pan when baking
