We're calling these yummy Chocolate Marshmallow Cookies made with chocolate chips our Blizzard Cookies. They were supposed to be Whoopie Pies. Sometimes you just have to improvise.

It's New England. It snows. Sometimes it snows a lot. Like one weekend. In Connecticut we got 3 feet of snow. Blizzard Charlotte graced us with more snow than the Blizzard of 1978!

My youngest adult daughter left her condo and stayed with us over the weekend. (There's no place like home.) We were prepared. I had plenty of flour, sugar, eggs, vanilla, bananas, chocolate chips, marshmallows, nuts and everything else needed to have a Blizzard Baking Fest.

We had farmers cheese, mashed potatoes and onions. My daughter and I made over 200 Polish Pierogi on Friday! You'll love my authentic Potato Cheese Pierogi Filling Recipe.

I had 9 bananas, so we made 3 loaves of Banana Bread.

On Friday I made Crockpot Pot Roast. On Saturday when my husband spent 12 hours snow blowing, we enjoyed one of my freezer meals, Crockpot Chicken Cacciatore for dinner.

But I had no Fluff to make Whoopie Pies. We had marshmallows though. We searched the for recipes and found one with Karo syrup but decided against it. After I lamented the fact on Facebook and made these Chocolate Chip Marshmallow cookies, my friend Carrie from Poet in the Pantry sent me this recipe for her Whoopie Pies made without Fluff. I'm definitely going to be trying it!

After so much baking, I'm out of eggs now. The travel ban on Connecticut roads has been lifted. So I'll be off to Stop & Shop today to pick up more supplies.

Chocolate Chip Marshmallow Cookies


Enjoy this easy marshmallows cookie recipe made with chocolate chips!

1/2 cup butter, softened
1/2 cup brown sugar, packed
1/2 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups semi-sweet chocolate chips
2 cups miniature marshmallows

Preheat the oven to 375 degrees F (190 degrees C). Grease or line cookie sheets with parchement.
In a large mixing bowl, cream together butter, brown sugar and white sugar until smooth.
Beat in the eggs one at a time, then stir in the vanilla.
Combine the flour, cocoa, baking soda and salt; stir into the creamed mixture.
Mix in the chocolate chips and marshmallows.
Drop by rounded spoonfuls onto the prepared cookie sheets about 2 inches apart. These will spread quite a bit, so make sure the cookies are not too big.
Bake for 8 to 10 minutes in the preheated oven.
Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
