If you're in the mood for snacking, might as well make it a healthier snack! This homemade Sourdough Cheddar Cheese Crackers recipe is made from sourdough discard are easy to make and will please most everyone in your family.
In the Sourdough Facebook groups I've found several different easy DIY recipes for making your own cheddar cheese crackers from sourdough discard.
This recipe comes together quickly, either mixing by hand or using a food processor. I used my Cuisinart food processor to form this ball of dough.
First, I hand-grated real Wisconsin Sharp Cheddar Cheese using my hand grater. I usually use Vermont Cabot Cheddar cheese, but the Wisconsin was on sale. Next time, I'm going to use an extra-sharp cheddar.
These sourdough snack crackers would also be yummy with Rosemary and Sea-Salt, which I might try next.
Ingredients
1 cup sourdough discard (unfed starter)
1 tbsp extra virgin olive oil
3 tbsp melted butter
1/3 or more cup real grated sharp or extra-sharp cheddar cheese
Sprinkle with Fresh cracked pepper and sea salt
Preheat oven to 350 degrees.
Mix flour, butter and oil until it resembles sand (I find a food processor worked best)
Roll between two pieces of parchment paper or wax paper about 1/4 inch thin.
Spread super thin on wax paper sheet and score using a pastry or ravioli roller.
Transfer to parchment paper and place on a large cookie sheet. Pierce with a fork to prevent bubbling. Sprinkle with cracked pepper and/or sea salt.
Bake for about 10-15 minutes, or however dark you prefer. Let cool. Cut with a knife to separate if needed.
